Chung-day (left) and Yenchi were our hosts are an extraordinary couple. Aside from being warm and cheerful, they have an impressive array of interests and talents.
Foremost of these is tea. Both are widely experienced in the nuances of the taste, odor, and preparation of teas. They introduced us to the art of tea appreciation. For example, we had no idea that the best teas increase and change their flavors with every pouring of hot water over them. A layer of fermentation melts off the leaves and the next layer imparts its own subtly different flavor. Unlike our teas, which are thrown away after being brewed once, these rich Chinese teas gain more flavor with each brewing up to 10 or 15 times.
Chung-da is recognized as one of the top tea experts in Taiwan and is consulted by some of the main importers of high quality teas.
He is also a master of Chi-Kung, which is the precursor of true Tai-Chi. Practitioners from many countries visit him for instruction.
Yenchi is a talented practitioner of Chinese brush painting and calligraphy.
Both have Ph.Ds, (His in mechanical engineering, hers in linguistics) and both teach at a private university.
Just meeting this couple by itself made our whole Asian trip worthwhile.
